Cereal Pumpkin Bread recipe
You may wonder, cereal in bread? Once you try it, you’ll understand. The thick, smooth consistency of traditional pumpkin bread is speckled with bits of crispy, crunchy cereal -- every mouthful is a bite of taste and texture!
Ingredients:
2 ½ cup flour
2 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon nutmeg
2 medium eggs, beaten
1 ¼ cup brown sugar
1 cup pureed cooked pumpkin
½ cup milk
¼ cup vegetable oil
1 ½ cup Wheat Chex or similar breakfast cereal
¾ cup raisins, coarsely chopped
Directions:
Preheat oven to 350°F.
In a large bowl, sift together flour, baking powder, salt, baking soda, cinnamon, and nutmeg.
In a separate medium bowl, combine eggs, sugar, pumpkin, milk, and oil; whisk until smooth. Add to flour mixture and stir until mixed. Gently stir in cereal and raisins.
Transfer to a lightly greased bread pan. Bake 60 minutes, until an inserted toothpick comes out clean. Remove from oven, cool 15 minutes, and remove from pan to cool completely.
