Chocolate Pumpkin Muffins recipe

Chocolate and spiced foods are always a great combination, and spiced pumpkin is no exception. Moist muffins filled with pumpkin and chocolate chips will almost melt in your mouth, especially enjoyed warm from the oven.

Ingredients:

1 ½ cups all-purpose flour
½ cup sugar
2 teaspoons baking powder
½ teaspoon cinnamon
½ teaspoon salt
1 cup milk
½ cup cooked pumpkin puree
¼ cup of butter, melted
1 medium egg
6 ounces semisweet chocolate chips
¼ cup finely chopped nuts

Directions:

  1. Preheat oven to 400°F.

  2. In a large mixing bowl, combine flour, sugar, baking powder, cinnamon, and salt. Form a well in the center.

  3. In a small bowl, combine milk, pumpkin, butter and egg. Add to the well in the flour mixture and stir until lightly mixed. Add chocolate chips and stir until the mixture is moistened.

  4. Spoon mixture into greased muffin cups, filling each ¾ full. Sprinkle 1 teaspoon of chopped nuts over each muffin.

  5. Bake 20 minutes, then remove from oven and cool for minutes. Remove from pans and allow to completely cool on racks.

There is not enough pumpkin in this recipe. The muffins are good, but I could not taste or smell pumpkin in them. They seemed more like chocolate chip muffins. I will use this recipe again, but add more pumpkin and maybe a little more sugar.

I an Pagan, so this is one of our biggest holidays! I am the only Pagan left in my family, I have receipts of old however now that my daughter is 16 & really able to participate I am looking for a few new foods to introduce. Aside from the soul cakes I will be making the above recipie, I can't wait to see how they turn out! I will do another post to let you all know ;)

Easy recipe, but I agree, I could not taste the pumpkin. I would suggest adding more and adding some allspice to it. I actually replaced the chocolate chips with raisins and it turned out great.

Wow, fabulous. I made puree from a pumpkin + water in blender and used a full cup. No yolk. I added 1 tsp ea nutmeg, ginger, pumpkin spice, cloves. brown sugar. Yum. And I baked in an 8"x8" pan.

Very bland if baked with ingredients recipe calls for above. Threw out the whole batch. Will not be baking these again!

I made these with a few minor changes. I used only a 1/4 cup sugar and added 1/4 cup date butter(or use pumpkin or apple butter). I also added nutmeg and chopped dark choclate instead of the chocolate chips. I used whipping cream mixed with water instead of the milk for richness and chopped almonds. Nice recipe!
