Baked Pumpkin recipe

This baked custard brings out the star qualities of pumpkin -- it's delightfully creamy, smooth, and spiced, with just enough sweetness to carry the fall flavors. Enjoy with a large dollop of whipped cream and fresh orange zest for a treat suitable for any time of day.

Ingredients:

¼ cup butter, melted
2 medium eggs
2 cups pumpkin puree
1 cup sugar
1 cup milk
½ cup flour
1 teaspoon vanilla
¼ teaspoon salt
¼ teaspoon baking soda
¼ teaspoon cinnamon

Directions:

  1. Preheat oven to 450°F.

  2. Place all ingredients in a large bowl and mix until thoroughly combined.

  3. Pour into a lightly greased shallow baking dish and bake 30 minutes. Serve warm or at room temperature.

Tasted good. We thought it was a little too sweet and not enough cinnamon. Both easy adjustments and the recipe was really easy too.

This tasted good. I didn't put any vanilla considering the 1 cup of sugar already added... I didn't put any milk either! I have one question: how many calories is in this recipe?

Mmmmm, good stuff. I upped the cinnamon and added nutmeg. I topped with a touch of whipped cream. It's a winner.
Saved this recipe because I will be making it again.

It came out very watery. I followed the directions to a tee, but I use fresh pumpkin instead.

Yummy! U tweeked it a bit by using less sugar, flour, and milk. I also subbed pumpkin pie spice for the cinnamon. I also used fresh pumpkin and it turned out great! Not too sweet with a custardy taste. Like pumpkin pie without the extra. Will def make again.
