Pumpkin Cheesecake recipe

As decadent as cheesecake is, it's one of the easiest baked desserts to prepare. No sifting, no kneading, no separate mixing bowls - just beat all ingredients together and bake until done.

Ingredients:

One 9-inch pie shell
6 ounces cream cheese, softened
2 eggs
1 ½ cups sugar
¾ cup pureed cooked pumpkin
¼ cup flour
½ teaspoon nutmeg
½ teaspoon cinnamon

Directions:

  1. Preheat oven to 350°F.

  2. In a large bowl, beat cream cheese, eggs, and sugar together until smooth. Add pumpkin and stir until combined. Stir in flour, nutmeg, and cinnamon. Beat well.

  3. Pour into prepared pie shell and bake 60 minutes. Allow to cool and serve.

Made this several times also for party, family and friends... DELISH! Added t. ginger and subbed honey instead of sugar (1 c.) mixed everything in the blender before baking... perfect every time. Just made one using butternut squash leftover from dinner! Great Go To recipe! Thanks.

Good, VERY easy but way too sweet for my taste. Next time I will switch the quantities of pumpkin and sugar -- 1 1/2 cups pumpkin, 3/4 sugar. I put it in a cookie crust shell.

Delicious and easy, but its a little bit too sweet (sugar headache sweet!) Next time I would use about 3/4 to 1 cup of sugar instead. Made using light cream cheese and a homemade graham cracker crust. My boyfriend loves it, will absolutely make this again .

Used a whole block of cream cheese (8oz), 1c sugar, and 1c pumpkin. Ginger snap crust is good too.

I just made the second one today with my two youngest grandkids, Ben and Jon. Ben decided it needed a secret ingredient and chose mint chocolate chips.
It's smokin good.
The first one I made with my two granddaughters, Skye and Rayne. They wanted to follow the recipe. It was great with strawberries and whipped cream.
