Honey Pumpkin Pie recipe

Honey makes pumpkin spices pop -- nutmeg becomes a bit nuttier, cinnamon a bit sweeter, ginger a bit spicier. This recipe makes for one flavorful pumpkin pie that’s a breeze to prepare for any celebration.

Ingredients:

2 medium eggs
½ cup honey
¾ teaspoon nutmeg
½ teaspoon cinnamon
½ teaspoon salt
¼ teaspoon powdered ginger
1 ½ cups pureed cooked pumpkin
¾ cup milk
One prepared pie shell

Directions:

  1. Preheat oven to 450°F.

  2. In a large bowl, beat eggs until yolks and whites are well blended. Gradually beat in honey until incorporated and thick. Add the nutmeg, cinnamon, salt and ginger.

  3. In a separate medium bowl, whisk together pumpkin puree and milk. Pour into egg mixture, whisk until smooth, and pour into pie shell.

  4. Bake 10 minutes, reduce temperature to 350°F, and continue baking 20 to 25 minutes, until filling is firm. Remove and cool before serving.

Love it! Easy and healthy. I used pumpkin fresh from my garden. I did not puree the pumpkin which gave the pie a rustic texture that went well with the honey. I don't like overly sweet desserts--this was just a touch of sweetness with great spiciness. Note: The pie shell needs to be cooked before putting in the filling--that wasn't very clear from the directions.

Delicious and easy to make. Used Fresh Pumpkin and a frozen deep dish pie crust. Baked on lowest rack in oven and crust cooked fine. After reducing temperature my pie required 45 minutes for the filling to be firm.

Recipe was so good! I don't like store bought pumpkin pie but this recipe was so good! I use regular large pumpkins from the grocery store.
