Pumpkin Pudding recipe

Although this recipe is delicious on its own, it is also amazing as a filling for a cake or cupcake.

Ingredients:

  • 5 large egg yolks
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter
  • 1 can pumpkin puree
  • vanilla wafers, as needed
  • chopped pecans, to taste, optional

Directions:

  1. In a large bowl whisk together the egg yolks, sugar, cornstarch and salt.

  2. In a saucepan bring the milk to a boil. Slowly whisk it into the egg mixture.

  3. Pour this mixture into a clean pan and cook until thickened. Remove from heat and add the butter, vanilla extract, and pumpkin puree.

  4. Let cool in the refrigerator with plastic wrap on top so that it does not form a skin.

  5. Serve with vanilla wafers like banana pudding and top with chopped pecans.

Putting the mixture back into a clean pan to cook it keeps the pan from scorching.

My kids LOVED this! I have never made homemade pudding before and it was pretty easy to do.

I can only get fresh pumpkin, not canned, where I live. Please tell how many cups are in a can of pumpkin. Thank you!

1 can is usually 450 ml or like 1 3/4 cups.
